What is it that makes a great wine? A great site, a great climate, attentive viticulture, and a winemaker - from a viticulturists’ viewpoint of course.

One of the key elements in this process is understanding the vines annual cycle and how to deal with the variables of each variety and each years cycle begins at one of the most critical stages, winter dormancy.

It is during this phase the vine is pruned back in readiness for the coming season.
