Winemaking Techniques
From the beginning of the winemaking process in the vineyard through to the bottling process, every decision and action is made with quality in mind and with the purpose of making the very best wine we can from the fruit produced from each unique vineyard site.
To allow a truly unique reflection of terroir, before every winemaking decision we consider what effect this will have on the individual expression and quality of the wine. There is a huge contrast between seeing a beautiful woman apply sufficient makeup to enhance her natural beauty and the totally fake layering of cosmetics that may well create the “perfect look” that so often has the natural appeal of a department store manikin. The question we are constantly faced with in today’s society of conformity is, do we stay true to natural expression or do we follow the course of so many winemakers in making wines by numbers that retain the individual expression of coco cola.
Our winemaking is simple, find a great site, plant it intelligently, grow the vines sympathetically to its surrounding eco-systems, work with balanced vines, use minimal chemical intervention in both vineyard and winery and know when it is time to sit back and let nature just take its course.
Where possible our wines are bottled unfined and where necessary this is kept to an absolute minimum. For our red wines where possible they are also bottled unfiltered. For each wine we make you will find extensive winemaking notes on this website, those notes will also reflect how we expect the wine to age as generally we expect our wines to age gracefully.
